Creating Christmas Memories of My Own

Late last night I put my one of my favorite cakes in the oven. I  only make it at Christmas time.  It is a brown sugar pound cake and smells as wonderful when I am mixing it as it does when it is baking.  I am always asked for the recipe, so here it is!  Thanks for asking for it friend I have known the longest :)

Brown Sugar Pound Cake

1 cup butter, softened
1/2 cup shortening
2 cups firmly packed brown sugar
1 cup granulated sugar
6 large eggs
3 cups cake flour
1 t. baking powder
1 cup evaporated milk
2 t. vanilla extract
2 cups chopped pecans, toasted ( I have used walnuts which I think I prefer)

Beat butter and shortening at medium speed. Gradually add sugars, beating until light and fluffy.  Add eggs, 1 at a time, beating just until the yellow yolk disappears.

Sift together flour and baking powder;add to butter mixture alternately with milk, beginning and ending with flour mixture.  Beat batter at low speed just until blended after each addition.  Stir in vanilla and pecans. Pour batter into a greased and floured 12 cup tube pan(I have used a fluted pan and the extra in a loaf pan!) Place pan in a cold oven; set over temperature to 300 degrees.  Bake 1 hour 30/45 minutes until tester comes out clean. Cool 15 minutes before removing(though I find 5 minutes works sometimes!)

Excellent for breakfast toasted with a good cup of coffee.  I hope you enjoy it as much as I do! Merry Christmas to all.
